About Us
The Confrérie de la Chaîne des Rôtisseur, Baillage de Milwaukee, Inc, is the Wisconsin Chapter of the international food and wine society founded in 1248 and known world wide by its red, white and blue emblem and its storied name, the Confrérie de la Chaîne des Rôtisseur. Our organization is a private, membership-only club dedicated to the pleasures of the table and the promotion of the gastronomic arts. We have nearly 60 members and our own wine cellar. We schedule from eight to ten events per year and support Milwaukee and Wisconsin’s greatest chefs and restaurateurs.
Our Chapter is distinguished by our professional members. These leading contributors to the culinary arts can be found under “Chaîne Milwaukee Restaurants”. You can be assured of the finest in service and cuisine at these locations.
Our organization supports young professionals in the food service industry through our support of the Chaîne Young Chefs Competition, and through our local scholarship programs.
We are dedicated to preserving the traditions and grandeur of true haute cuisine.
